Mean Moe's Ultimate Crab Cakes with Mustard Dipping Sauce

1 pound fresh crab (recommended with claw meat)

1/2 cup chopped green onions

1/2 cup chopped red bell peppers

3 tablespoons chopped fresh Basil

2 tablespoons fresh lemon juice

2 tablespoons Hellmans Mayonnaise 

1 tablespoon Dijon Mustard

1-1/2 tablespoons Mean Moe's Original Badass Rub

1/2 teaspoon hot sauce

dash of Worcestershire sauce

3-1/4 cup Ritz crackers crushed

1 large egg

Mix first 10 ingredients in large bowl. Add salt and pepper as needed. Mix in 1/4 cup Ritz crackers and egg. Make crab mixture into patties (your choice in size) (can be made 4 hours ahead. Cover;chill)

Place remaining Ritz crackers into shallow dish. Cover crab cakes in crackers, pressing to adhere. Dust off excess if needed.  Melt 1 tablespoon butter with 1 tablespoon oil in heavy large (cast iron) pan over medium heat. Cook until golden brown about 3-4 minutes per side. Repeat with remaining butter, oil and crab cakes.

Mustard Dipping Sauce

1 tablespoon dry mustard

1 tablespoon boiling water

1 cup Hellmans Mayo

2 tablespoon fresh lemon juice

1 1/2 tablespoons Dijon Mustard

1 tablespoon Horseradish 

Place dry mustard in medium bowl. Add 1 tablespoon boiling water and stir to form paste. Cool. Whisk in mayo,lemon juice, Dijon and horseradish. Season to taste with salt and pepper.
